We are speeding right through summer, no? Things have been a little crazy for us ever since Derrick got back from Korea. So here’s what’s new in the form of my Friday Five: good things about the past few weeks.
1. My kitties. Two weeks ago, one of our cats (the calico one) got really sick, and I’ll spare you the details, but basically we thought we were going to have to put her down. Which was gut-wrenching, soul-crushing, depressing stuff. But she turned it around, started getting better and while still not quite 100% back to normal, she’s happy and mostly healthy again we think (which is good because we just spent $1500 on tests and medicine and such for her so I’m glad it was for a good reason).

3. These recipes:
THIS recipe for Crock Pot pulled pork. Y’all, this is sooo easy and tastes really good! What I love about it the most is how much 6-7 lbs of pork roast is and how long it will feed 2 people. I didn’t really have to cook all week and somehow we managed to not get sick of eating it night after night because that’s how yummy it was. I was going to take a picture of it when I took it out of the slow cooker, but we were apparently really hungry and I never got around to that.
This recipe for hummus-crusted chicken. I modified it to make just the chicken without the vegetables because I don’t eat zucchini/squash, but who knew that slapping a bunch of hummus on chicken and baking it would be so tasty (if you like chicken and if you like hummus)? Again, next to zero prep time and you’re on your way to deliciousness.
